Happy Cinco de Mayo!

I was going to do a blog post about an awesome Mexican dish to make on Cinco de Mayo, and then I realized — I don’t have an awesome Mexican dish to make on Cinco de Mayo. Coincidentally, I planned on serving tacos to my family before I even realized the date.

So, what about you? Do you celebrate any holiday? Or do you need a reason to bring out the special recipes? Got anything for me to make next May 5?

  1. I’ve made some awesome chicken enchiladas from a recipe I found on Betty Crocker’s website. Other than that, I usually just do it up all the fixin’s for regular tacos and my family either loads up taco shells or rolls the stuff up in a burrito shell. I do make an awesome Velveeta cheese sauce on occasion (recipe from my mom who got it from someone else eons ago). It’s easy to do and makes tacos and burritos taste fantastic. Make up a simple white sauce with flour, butter, milk, salt & pepper, then melt the Velveeta in it. You can add drained green chilis or hot sauce, but I don’t put in either. We love it just the way it is. đŸ™‚

    No, really, we’re all about the tacos since I have three kids under the age of ten. They love to do it themselves, and everyone (including me and the hub) thinks it’s fun to break the rules and eat without utensils once in a while. I have a great recipe that I lifted off of the Ladies Home Journal website ages ago for spinach and chicken enchiladas. So good!

    • It’s nice not having to serve the wee ones, isn’t it? Course, they always put too much stuff in their tacos and it all comes out the other side. Oh, well.
