Wish me luck…

I’ve never had good luck with dried beans.  I can soak them for DAYS and they’ll still be crunchy.

I’ve been soaking kidney beans for about 20 hours and I’m about to make red beans and rice the slow cooker.  Please send any soft-bean vibes my way.

  1. I never soak my beans. I only rinse, then put into a large roasting pan or dutch oven 1 part beans to 3 parts water. The problem is, you’re not cooking them long enough. And I always slow cook them in the oven these days. I check the water level after about 4 hours and if it needs more I add enough to cover the beans by about 2 inches, then check again in another couple of hours. If I were to use the crock pot, I do everything the same, but turn the temp to the highest level and cook for 8 hours.

    Let us know how your beans and rice turn out and what other ingredients you added. I may want to try it from scratch. Right now I just whip out the Zatarain’s for a quick side. 😉

  2. Okay, I turned the slow cooker to high for a couple of hours based on your info … AND THE BEANS WERE SOFT!!! Yay! Ooh – look at the seasonings on the Zatarain’s box and use those.

    *I* liked it, and Thing 1 liked it, but Thing 2 made the icky face. He had leftovers from last night, and then T1 wanted HIS leftovers from last night, so the red beans and rice were abandoned by everyone but me.

    I’m thinking breakfast tomorrow…

        I don’t like eating normal breakfast foods, at least not all the time. I ended up taking out three servings and freezing the rest. So while it may seem a strange choice, it’s actually quite normal. For me.
