Gluten-Free Chicken Pasta Salad

I don’t know what it’s like where you are, but we’re having summer-like days here in Virginia. ๐Ÿ™‚ Loving it!

Well, except when I need to make dinner. I mean when it’s ninety outside, I prefer something light and cool for dinner. So here’s a light fare that’s fast, easy and of course, gluten-free!

Chicken Pasta Salad

4-6 Cooked Chicken Tenderloins, cubed
Vegetables in season (or frozen carrots, corn & peas)
2 Hard-boiled Eggs (chopped)
1 Bag Gluten-Free Pasta
1/2 C Fat Free Salad Dressing (Pick your favorite flavor)
Roma Tomatoes
Feta Cheese

Boil pasta until tender. While pasta is boiling, combine chicken, vegetables, eggs and salad dressing in a large serving bowl.

Rinse pasta with cold water then add to serving bowl and mix thoroughly.

Halve tomatoes. Mix some with the pasta dish, use remaining six-eight pieces as garnish on top of pasta. Sprinkle with feta cheese. Serves 4-6 people.

A light and healthy dessert–in a separate bowl serve fresh strawberries, blueberries and blackberries.

Ingredients
