Gluten-Free Girl Twists The Chocolate Chip Cookie

Who doesn’t love chocolate chip cookies? When I went gluten-free it was the first thing I craved. I worked for a long time find a recipe that is both gluten-free and yummy. This week, I discovered I needed one more thing…a recipe that my children could help bake.

So here’s the recipe. Did it meet the yummy, kid-friendly requirements? Well, let’s just say these cookies didn’t last long in my house.

Crispy Chocolate Chip Cookies

1 C Garbanzo Bean Flour

1/4 C All-purpose, Gluten-Free Flour

1/2 tsp Baking Soda

1/2 tsp Xanthan Gum

1/2 tsp Sea Salt

1/2 C (1 Stick) Unsalted Melted Butter, Slightly Cooled

1/2 C Firmly Packed Light Brown Sugar

1/2 C Granulated Sugar

1 Large Egg

1 tsp Vanilla Extract

1 C Semi-Sweet Chocolate Chips

2 C Gluten-Free Rice Krispies Cereal

Preheat oven to 350 degrees. In a medium bowl, mix flours, salt, xanthan gum and baking soda. Stir in Rice Krispies and chocolate chips. Set bowl aside.

In a large bowl cream sugars and butter until smooth. Mix in vanilla and egg. Beat until creamy. Stir in flour mixture until thoroughly blended.

Drop rounded spoonfuls onto ungreased, foil-covered cookie sheets. Bake cookies 9-12 minutes or until edges are golden brown. Allow to cool on cookie sheet for five minutes before moving to cooling rack.

Cookies store in a sealed container for a week. Well, assuming they last that long! 🙂

  1. You can buy Xanthan Gum?? What aisle of the store is it located in?

    BTW: I’m happy you found a chocolate chip recipe that tastes great! I know someone who is gluten free (medical reasons) and misses everything. Whole Foods (an overly priced “organic” grocery store) makes GF treats but she said its rip-off expensive and tastes horrible. I’m happy I can pass on a chocolate chip cookie recipe!

      You can buy Xanthan Gum at the grocery store. It’s in the gluten-free aisle or sometimes in the organic aisle. I purchased mine at Wegman’s (a grocer found mostly in the northeast and mid-atlantic states). Last week, I found it the gluten-free/organic aisle at the local Wal-Mart.

      I know what your friend means about over-priced but under-yummy pre-packaged gluten-free foods. The good news is that everyday, there’s new stuff on the market aimed at making life tastier for those living the gluten-free lifestyle. In the meantime, I hope she enjoys the recipe.

    • I can’t remember how it works, but it helps make the cookies the proper consistency so that they’re not too flat.

      The trick with using my recipe is to make sure if you’re baking GF cookies, you purchase the Gluten-Free Rice Krispies. 🙂

      • They look like they raised very nicely. My cookies almost always come out flat. Not long ago I realized I needed more or less flour. Now I can’t remember which. Oh well, thankfully the guys gobble them up no matter how they come out. 🙂

  2. Okay, so I had to look up Xanthan Gum. It’s a substance produced by bacterial fermentation or synthetically and used in foods as a gelling agent and thickener. So I wonder why they named it “gum?” *shrugs and moves on*
