Shrimp Scampi: Chicklets in the Kitchen Post

I seem to be on roll with the pasta recipes but I don’t care. I love pasta. I was thinking about what to do differently this week for our Saturday pasta night and it occurred to me that I could do a shrimp scampi. Was I watching an Olive Garden commercial at the time? Maybe. Anyway, I looked on the internet and for a fancy dish, shrimp scampi is surprisingly easy to make.

Serves 2 – 4.

Hardware

Large frying pan

Cutting board

Knife

Serving Bowl

Pot for Spaghetti

Ingredients

2 Tblsp butter

1 cup shredded parmesan

1 lb shrimp, rinsed and patted dry

2 Tblsp minced garlic

Salt and Pepper to taste

3 Tblsp Lemon juice and the zest of 1 lemon

1/4 cup Pinot Grigio

In a large pot, cook 12oz spaghetti according to package directions.

While the water comes to a boil and you cook the spaghetti, melt the butter in the frying pan.

When it begins to foam up, add the shrimp, garlic, salt and pepper.

If you’re using raw shrimp, cook about 2 minutes per side. If you’re using already cooked shrimp, just a minute per side to warm it through.

Remove from pan to serving bowl, then toss in the lemon juice, zest and wine. Bring to a boil and let reduce a little.

Add the parsley.

Return the shrimp to the pan.

Drain the cooked pasta, put in serving bowl, add the shrimp scampi and toss to coat.

Enjoy.

 

Notes: I didn’t think the scampi had enough sauce to coat the spaghetti so I added 2 Tblsp each of butter and extra virgin olive oil and tossed again.

I also added shredded parmesan cheese to my bowl. I know the rule is no cheese in seafood dishes but I really like parmesan cheese.

The Zen of Fishing

Over the weekend, I took my 2 sons to Ocean City, New Jersey for a trip called Fishing for Kids. No, I wasn’t fishing for more kids. I have more than I can handle now, thanksabunch. 🙂

It’s organized by the Ocean City Yacht Club and it gives special needs and disadvantaged kids a chance to get out on the water and experience the joy of fishing. My youngest has autism so I heard about it through Variety Club, and when the notices went out, I signed up.

Mind you, I was a little hesitent at first. I’d only just taken the boys on a plane ride in April and that went well enough, but four hours in a boat? With fish? And worms? And no electronics? How ever would two modern teenage boys survive? Continue reading

Last weekend, a writer buddy and I escaped from life to spend two days at an intensive writing retreat. This was the third time we’d done gone off to get some serious work done on our manuscripts.

Gluten-Free & The Hawaiian Birthday Dinner

Last Saturday was my son’s seventh birthday. He requested a Hawaiian Luau for his party, complete with an authentic Hawaiian dinner. So I did the hard part. You guessed it, I ordered decorations from an on-line store and left the cooking to my husband.

“…At home??? In your own kitchen?!?!”

Have you ever cooked something and had people look at you oddly because of it? I never get tired of seeing people’s reactions when I make something unusual *grin* (though, yeah, getting a little sick of people’s horror over my use of spam as an ingredient. It’s salty pork product. Just like bacon. Or ham. I wouldn’t prefer it on a sandwich, but diced up in mac & cheese or fried rice, it’s amazing!)

One of my favorite dishes to cook is one that never fails to get that reaction from someone, but it is insanely easy to cook, the ingredients can mostly be found at ordinary everyday stores — though you may have to hit an Asian market, depending on how well-stocked the “ethnic foods” aisle is at your local grocery store. Publix made me grouchy when they didn’t have the best ingredient in the dish — and ohhhh is it good. I mean incredible. As in my husband’s eyes light up when he sees the ingredients out on the counter as I prepare to cook.
