Gluten-Free Girl & Yummy Breakfast Foods

Breakfast is the most important meal of the day. At least, that’s what my boys tell me, so it must be true. 🙂 But being gluten-free severely limits what I can eat at breakfast. Usually, it’s a bowl of delicious gluten-free cereal, but sometimes there are days when I want something that is quick, easy and doesn’t come in a bowl.

When I was younger, on those days, I’d grab a bit of toast with honey. But let’s face it, most gluten-free bread leaves a LOT to be desired. It just doesn’t have that same squashy yumminess of wheat bread. But there are companies out there that are working hard to give back to the gluten-free clan the yummy breads we crave.

One company, Udi’s has the BEST blueberry muffins I’ve tasted since going gluten-free. They come four to a pack in the frozen section of your grocery store. I keep mine frozen then as I want one, I pull it out, pop in the microwave for 30 seconds with a pat of butter and ba-dingo! I have super, squashy yummy goodness ready to eat.

Udi’s makes more than blueberry muffins too. They also do lemon streusel, double vanilla, double chocolate muffins, as well as cinnamon rolls. They also make bagels too, but those blueberry muffins are my absolute favorite.

Since I’m in all out writing mode for the next few months, I need breakfast foods that are fast, easy and portable. While I love my gluten-free cereal, it’s just not a good idea to eat it over my laptop. 😉

Favorite and go-to are not necessarily the same. 🙂 Sometimes I make a frittata and then eat it as the week progresses (using the fake eggs – I don’t think I could eat real eggs every day for a week!). Sometimes I make oatmeal in the crock and heat it up every day. But when I’m thinking yummy breakfast, neither of those come to mind. 🙂

    • I’m such a picky eater that favorite and go-to really need to go hand-in-hand. Since going GF oatmeal is mostly off my menu. Yes, there are steel-cut oats, but they take forever to prepare and I don’t know, I wasn’t never into oatmeal that much anyway.

  2. I meant to pop in last week to say blueberry muffins are my absolute favorite fast breakfast. I also do the crock pot oatmeal since Abigail told me about it, and I always have to add blueberries to my bowl. I’m hoping I’ll be able to go blueberry picking with AG this Spring. 🙂
